Specialty coffee is more than just a drink; it is the result of an ethical and artisanal commitment across the entire value chain, from origin to cup. To be classified as Specialty Coffee, a lot must score above 80 out of 100 on the Specialty Coffee Association (SCA) international scale, evaluated by certified Q-Graders.
Unlike commercial mass-market coffee, specialty coffee guarantees:

At Cafès Illes Balears, we combine over five decades of island roasting tradition with third-wave specialty coffee innovation. We roast weekly at our Palma workshop to guarantee peak freshness for homes, coffee shops, and hotels across Mallorca.
Our Freshness Rule: 6 Weeks
For our specialty coffees, we recommend a peak consumption window of 6 weeks from its freshly roasted date here on the island. It is during this time that the bean retains its essential oils and maximum aromatic intensity. After this period, the coffee remains perfectly safe and enjoyable to drink at home, though it gradually loses the delicate nuances that make specialty coffee unique.

Where is this coffee roasted?
As detailed on the label, it is roasted in Mallorca at our facilities by our master roaster. It is produced in small batches, which ensures a controlled, fresh and locally sourced process.
What is the difference between commercial coffee, gourmet coffee, and specialty coffee?
Commercial coffee targets high volume at low cost by using lower-grade beans and dark roasts. The term “gourmet” is merely a marketing label without technical regulation. Specialty coffee, by contrast, is the only category officially regulated by the SCA, guaranteeing a cupping score above 80 points, fresh roasting, and complete traceability from the farm of origin.
Is all specialty coffee organic?
Not necessarily. Specialty coffee measures quality and flavor purity in the cup (+80 SCA points), whereas organic certification verifies sustainable farming methods without chemicals. While not all specialty coffees are organic, at Cafés Illes Balears we hold Organic Certification across our entire specialty range.
Why is it recommended to buy whole bean coffee?
Whole bean coffee preserves essential aromatic oils and prevents the accelerated oxidation that occurs when coffee comes into contact with air. To enjoy maximum sensory complexity, we recommend grinding it just before brewing, though in our store we can also deliver it freshly ground tailored to your specific coffee maker.
What does the CBPAE organic certification mean for your specialty coffee?
The seal from the Consell Balear de la Producció Agrària Ecològica (CBPAE) certifies that the coffee has been grown without pesticides or synthetic fertilizers, and that our roasting and packaging process in Mallorca strictly complies with official biological traceability audits.

ELABORATION
Our coffee has been roasted in our facilities, located in Palma de Mallorca, following a rigorous quality assurance process. In fact, because of our elaborate way of roasting coffee, we make only 30 kg of coffee per roast.

The flavour and aroma of our coffee is closely related to its ability to preserve these properties.
Additionally, the coffee rotation system we use allows us to offer our customers a fresh and intense coffee that, being freshly brewed, retains all its properties In this line, it is important to note that all our bags are equipped with a one-way valve, which allows the optimal preservation of the coffee.
