Product Description

This Brazil Dutra Organic Speciality Coffee (85 SCA) is not a conventional Brazilian bean. It comes from the San José plot, one of the Dutra family’s most iconic estates in São João do Manhuaçu (Matas de Minas region). This land belonged to the grandparents of brothers Walter and Ednilson Dutra, pioneers of organic farming in the region.

Today, Fazendas Dutra is the largest producer of organic speciality coffee in the whole of Brazil. Out of a very small national organic production total (just 100,000 sacks a year), the Dutra family produces 25,000 sacks in accordance with strict standards of sustainability, passion and respect for the environment.

San Jose’s microclimate is truly special: a unique combination of rock formations, high-altitude mountains and lush forests that protect the coffee plants and lend the coffee its unmistakable flavour profile.

Depulped on the same day as harvesting and sun-dried on raised African beds, giving it a silky body, balanced acidity and a natural sweetness with notes of caramel and ripe fruit. Achieving a rating of 85 points places this Fazendas Dutra batch in a very high quality category: a clean, defect-free coffee with balanced acidity, striking sweetness, and complex notes of chocolate, fruit, and caramel.

How is this coffee roasted at Cafès Illes Balears?

We roast this coffee bean at our roastery in Son Ferriol (Palma, Mallorca) using a traditional method and a medium natural roast. We adjust the temperature curve batch by batch under the supervision of our Master Roaster to bring out the bean’s natural sugars (notes of caramel and chocolate) without masking the freshness of its origin.

Which grind size should I choose for my coffee maker?

We recommend buying whole beans if you have a coffee grinder at home, to preserve the full flavour. If you’d prefer to receive it ground, please select the option that suits your brewing method.

Why do you recommend consuming this specialty coffee within 6 weeks?

Artisan-roasted specialty coffees reach their peak aroma and flavour right after initial degassing (a few days post-roast). From the sixth week onwards, essential oils and delicate nuances—such as its chocolate and nut notes—gradually lose intensity due to natural exposure to oxygen.

This does not mean the coffee expires or goes bad; it remains completely safe to enjoy at home. We simply set this 6-week window as an artisan quality commitment to ensure you experience every cup at its absolute peak of freshness and organoleptic complexity.

How should I store my coffee bag at home?

To preserve its chocolate, caramel and ripe fruit flavour notes, store the bag in a cool, dry place away from direct light. Keep the compostable bag tightly sealed using its original airtight closure to prevent oxygen from degrading the essential oils in the freshly roasted beans.

To ensure our artisan coffees never lose their quality, once roasted, we pack them in bags equipped with a one-way valve and a zip lock, preserving their full flavour and aroma. All our artisan coffees are suitable for all types of coffee makers.

Our coffee is roasted at our facilities in Palma de Mallorca, following rigorous quality standards. In fact, due to our artisanal roasting process, we only produce 30kg of coffee per batch.
